INGREDIENTS
Grains
- 🍚 2 bowls of cooked rice (300g)
Seafood
- 🐟 1 piece of salted salmon (80g)
Eggs
- 🥚 2 beaten eggs
Vegetables
- 🥬 3 lettuce leaves (90g)
- 🧅 15cm green onion (45g), chopped
Condiments
- 🧂 1/2 tbsp soy sauce

- 1 1/3 tbsp salad oil
STEPS
Chop the green onion into fine pieces.
Heat 1/3 tbsp of salad oil in a frying pan over medium-low heat. Add the salted salmon and cook until both sides are browned. Remove, discard the skin and bones, and flake the salmon.
Wipe the pan clean, add 1 tbsp of salad oil, and heat over medium heat. Pour in the beaten eggs and stir until semi-cooked. Add the rice and stir to combine, breaking up any clumps.
Add the chopped green onion and flaked salmon to the pan. Stir-fry until well combined.
Drizzle soy sauce around the edge of the pan and stir until evenly incorporated. Tear the lettuce into bite-sized pieces and add to the pan. Stir briefly to retain the lettuce's crisp texture.
