INGREDIENTS
Fish
- 🐟 200g salmon fillet
Vegetables
- 🍄 100g shimeji mushrooms
- 1 piece ginger, julienned
- 🧅 Chopped green onion, as needed
Seasonings
- 🧂 Salt and pepper, to taste
- Flour, as needed
- 1 tbsp salad oil
Sauce
- 1 tbsp sake
- 🍬 1/2 tsp sugar
- 1 tsp soy sauce
- 1/2 tsp dashi powder
- 1/2 tbsp cornstarch
- 💧 150ml water
STEPS
Cut the salmon into thirds, season with salt and pepper, and lightly coat with flour.
Trim the root of the shimeji mushrooms and separate them. Julienne the ginger.
Mix all the sauce ingredients in a bowl.
Heat half the salad oil in a pan over medium heat. Add the salmon and cook until browned on all sides. Remove and set aside.
Wipe the pan clean with a paper towel. Heat the remaining oil, add ginger and shimeji mushrooms, and sauté until softened.
Re-stir the sauce mixture and add it to the pan. Cook while stirring until the sauce thickens.
Plate the salmon, pour the mushroom sauce over it, and garnish with chopped green onions.
