INGREDIENTS
Fish
- 🐟 1 fillet (100g) salmon
Vegetables
- 🥔 1 potato (150g), sliced
- 1/2 pack shimeji mushrooms
- 🍅 3 cherry tomatoes
Cheese / Dairy
- 🧀 10g pizza cheese
Seasoning
- 1/2 tbsp mirin
- 1 tbsp miso
- 1 tsp mayonnaise
- 🧄 A pinch of grated garlic
Garnish
- 🧅 Chopped green onion, as needed
STEPS
Slice the potato into 5mm slices and soak in water. Drain and microwave for 3–4 minutes at 600W until slightly softened. Cut the root off the shimeji mushrooms and separate into small clusters.
Mix the miso sauce ingredients (mirin, miso, mayonnaise, garlic) in a bowl.
Layer the potato slices on a heatproof dish, place the salmon, shimeji mushrooms, and cherry tomatoes on top, and pour the miso sauce over. Cover with aluminum foil and bake in a toaster oven for 12 minutes.
Add pizza cheese on top and bake further until the cheese melts.
Sprinkle chopped green onion on top before serving.
