Salmon and Burdock Sweet Vinegar Sauce

  • Fish

    • 🐟 2 fillets salmon
  • Vegetables

    • 150g burdock root
    • 🥕 90g carrot
    • 1 piece ginger
  • Seasoning

    • 🧂 Pinch of salt and pepper
    • Potato starch as needed
    • 2 tbsp salad oil
    • Chopped green onion as needed
  • Sauce

    • 3 tbsp vinegar
    • 🍬 2 tbsp sugar
    • 🧂 1/3 tsp salt
    • 1 tbsp soy sauce

STEPS

Cut ginger into thin strips, slice carrot and burdock root into bite-sized pieces, and soak burdock root in water. Drain well.

Place burdock root and carrot in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 5 minutes.

Cut salmon into bite-sized pieces, season with salt and pepper, and coat with potato starch.

Heat salad oil in a frying pan over medium heat, add salmon, and cook until both sides are lightly browned.

Add carrot, burdock root, and ginger to the pan. Cover and steam for 5 minutes.

Remove excess oil from the pan, add sauce ingredients (vinegar, sugar, salt, soy sauce), and simmer until the sauce thickens and coats the ingredients.

Serve on a plate and garnish with chopped green onion.
