Finely chop 1/4 of the lotus root and grate the remaining 3/4.

Cut the baby cheese into 5mm cubes.

In a bowl, mix the grated lotus root, chopped lotus root, sakura shrimp, baby cheese, potato starch, salt, and pepper. Divide into 6 equal portions.

Heat salad oil in a frying pan over medium heat. Shape the mixture into patties and place them in the pan. Cook until browned, then flip, cover with a lid, and steam-fry on low heat for 3–4 minutes.
