INGREDIENTS

- 225g shelled broad beans

- 3 tbsp dried sakura shrimp
Flour
- 1 tbsp all-purpose flour
- 4 tbsp all-purpose flour
- 2 tbsp potato starch
Liquid
- 5 tbsp cold water
Oil
- Enough salad oil for frying
STEPS
Remove broad beans from their pods, make a small cut in the skin, and peel off the thin skin. Thinly slice the onion.
In a bowl, combine the broad beans, onion, and sakura shrimp. Sprinkle 1 tbsp of all-purpose flour over the mixture and coat evenly.
In a separate bowl, mix the batter ingredients (4 tbsp all-purpose flour, 2 tbsp potato starch, and 5 tbsp cold water). Add the coated vegetables and gently mix.
Heat salad oil to 170°C in a pot, ensuring it's about 3cm deep. Place 1/4 of the mixture onto a wooden spatula and gently slide it into the oil. Fry for 1-2 minutes until the surface sets, then flip and fry for another 3 minutes until lightly golden.
