INGREDIENTS
Fish
- 1 can saba (190g)
Egg
- 🥚 2 eggs
Vegetables
- 🧅 1/2 onion
- 1/2 red paprika
- 5 shiso leaves
Staple
- 🍚 2 bowls white rice (300g)
Oil
- 2 tbsp salad oil
Seasoning
- 1 tbsp sake
- 🍬 1/2 tbsp sugar
- 1 tbsp concentrated soy sauce
- 🧄 1/3 tsp garlic paste
- 1/2 tsp ginger paste
- 1 tsp yuzu pepper
- 🧂 Pinch of salt and pepper
STEPS
Heat half of the salad oil in a frying pan, crack the eggs into the pan, and cook sunny-side up eggs to your desired firmness. Remove and set aside.
Drain the saba can, dice the onion and red paprika, and tear the shiso leaves into small pieces.
Heat the remaining salad oil in the frying pan, add the saba, onion, and red paprika, and stir-fry over medium heat until the vegetables soften.
Add the seasoning ingredients (☆), break apart the saba while stir-frying, and mix in the shiso leaves. Serve the stir-fried mixture over warm rice and top with the sunny-side up eggs.
