INGREDIENTS

- 75g chives
- 🥚 3 eggs
- 🍤 8 frozen shrimp
- 8–16 rice paper sheets
- 1 tbsp cornstarch

- 🍬 1 tsp sugar
- A pinch of pepper
- Warm water as needed
- Cooking oil as needed
Optional Sauce Ingredients

- 1 tbsp ketchup
- 1 tbsp corn syrup
- 1 tbsp soy sauce
- 🍬 1 tbsp sugar
- A pinch of pepper
- 1 tbsp vinegar
- 1 tbsp chili powder
- 1 tbsp mirin
STEPS
Defrost the shrimp in water, remove tails, and pat dry with a paper towel. Sprinkle with pepper.
Wash and dry the chives, then chop them into small pieces.
Beat 3 eggs with 1/2 tsp salt and 1 tsp sugar until well mixed.
Heat a wok with oil, pour in the egg mixture, and stir quickly to make scrambled eggs.
Once the eggs are cooked, add the chopped chives and mix lightly. Transfer to a bowl and let cool.
Dip rice paper sheets in warm water until softened.
Place shrimp and egg-chive mixture on the rice paper and wrap tightly.
Prepare the sauce by mixing minced garlic, ketchup, corn syrup, soy sauce, sugar, pepper, vinegar, chili powder, and mirin.
Heat a pan with oil and fry the rolls until crispy and golden brown.
