INGREDIENTS
Meat
- 150g ground chicken
Vegetables
- 150g sliced lotus root
Coating
- Potato starch, as needed
Oil
- Salad oil, as needed
Meat Seasoning
- 2 tbsp chopped green onion
- 1/2 tsp grated ginger
- 1 tbsp sake
- đź§‚ A pinch of salt
- 1 tbsp potato starch
Soy Sauce Glaze
- 2 tsp mirin
- đź§‚ A pinch of salt
- 1 1/2 tsp soy sauce
- 100cc water
- 1/2 tsp Japanese dashi powder
- 1 tsp potato starch
STEPS
Slice lotus root into 12 thin pieces, soak in water, and pat dry with kitchen paper.
Mix ground chicken with meat seasoning ingredients in a bowl until sticky, then divide into 6 portions.
Place 12 lotus root slices on a cutting board, sprinkle potato starch, and add meat mixture to 6 slices. Cover with the remaining slices and coat both sides with potato starch.
Heat salad oil in a pot to 170°C, fry the stuffed lotus root slices for about 3 minutes, flipping occasionally.
Combine soy sauce glaze ingredients in a small pot, heat over medium heat, and stir until thickened.
Plate the fried lotus root slices and pour the soy sauce glaze over them.
