Refreshing and Sweet Tofu Napa Cabbage Soup

  • Main Ingredients

    • 6 leaves napa cabbage
    • 1/2 block tofu
    • 2-3 green chilies
    • đź§„ 1 tbsp minced garlic
    • đź§… a small amount of chopped green onion
    • 1 tbsp gochujang
    • 1 tbsp soy sauce
    • đź§‚ a pinch of salt
    • a pinch of pepper
  • Broth Ingredients

    • 1 piece kombu (5cm x 5cm)
    • 10-12 dried anchovies

STEPS

Prepare the ingredients. Cut napa cabbage and tofu into bite-sized pieces. Slice green chilies as desired.

In a pot, add water, kombu, and dried anchovies. Bring to a boil over high heat.

Reduce to medium-low heat and simmer for 10-15 minutes.

Remove kombu and anchovies from the pot. Stir in 1 tbsp of gochujang until fully dissolved.

Increase to high heat and add napa cabbage. Cook for about 10 minutes.

Add 1 tbsp of soy sauce to the pot.

Add tofu and green chilies to the pot. Cook for an additional 5 minutes.

Add 1 tbsp of minced garlic and chopped green onion. Season with salt and pepper to taste.
