    • 150g somen noodles

    • 40g sausage
  • Vegetables

    • 80g eggplant, diced
    • 30g bell pepper, diced
    • 🍅 120g tomato, diced
  • Seasoning

    • đź§„ 1/4 tsp grated garlic
    • 1/2 tbsp olive oil
    • 50cc water
    • đź§‚ 1/4 tsp salt
    • 1/4 tsp consomme
    • Pinch of pepper
  • Sauce

    • 1 tbsp concentrated noodle sauce
    • 150cc water
  • Topping

    • đź§€ 1 tsp grated cheese

STEPS

Dice the onion, eggplant, bell pepper, and tomato into appropriate sizes. Remove seeds and stems where necessary.

Slice the sausage into 1cm pieces.

Boil water in a pan and cook the somen noodles according to package instructions. Drain and rinse with cold water, then plate.

Heat olive oil in the same pan over medium heat. Sauté onion, eggplant, bell pepper, and garlic until softened. Add sausage, tomato, and seasoning ingredients. Cover and simmer for 3-4 minutes, then uncover and reduce liquid.

Mix noodle sauce and water in a bowl to create the dipping sauce.

Pour the sauce over the plated noodles, top with the ratatouille mixture, and sprinkle grated cheese.
