INGREDIENTS
Vegetables
- 🍅 2 tomatoes
- 🍆 1 eggplant
- 🥒 1 zucchini

Sauce
- 1/2 cup tomato sauce
Seasoning
- 1 tbsp olive oil
- 1 tsp black pepper
- 1 tbsp grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
STEPS
Slice the eggplant, zucchini, and tomatoes into 0.5 cm thick pieces.
Finely chop the onion and sauté it lightly in olive oil in a frying pan.
Spread the sautéed onion in an oven-safe dish and layer tomato sauce on top.
Layer the sliced vegetables alternately on top of the onion and sauce.
Drizzle olive oil and sprinkle black pepper over the layered vegetables.
Bake in a preheated oven at 180°C (356°F) for 20-30 minutes.
Sprinkle Parmesan cheese, mozzarella cheese, and parsley on top of the baked vegetables.
