STEPS
Wash the pumpkin skin thoroughly and lightly pat dry. Wrap it loosely in plastic wrap and microwave at 600W for about 5 minutes. Let it cool slightly, then scoop out the flesh with a spoon and mash it into a smooth paste in a bowl.
In a separate bowl, mix the beaten eggs and sugar until the sugar dissolves. Add the pumpkin paste and mix until well combined. Gradually add the milk while mixing to create a smooth pudding mixture.
Divide the pudding mixture evenly into ramekins. Microwave each ramekin individually at 600W for about 1 minute. Let them cool slightly before serving.
