INGREDIENTS

- 🎃 200g pumpkin, seeds and pulp removed
Starch
- 2 tbsp potato starch
Sweeteners
- 🍬 2 tbsp sugar
Seasoning
- 🧂 1 pinch salt
Oil
- 1 tsp salad oil
STEPS
Cut the pumpkin into bite-sized pieces with the skin on. Place in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for about 5 minutes until soft.
Mash the pumpkin with a fork while still hot, then mix in potato starch, sugar, and salt. Divide into 6 portions and shape into flat rounds about 1cm thick.
Heat salad oil in a frying pan over medium-low heat. Place the rounds in the pan and cook for 3–4 minutes until golden brown. Flip, cover with a lid, and cook similarly on the other side.
