INGREDIENTS
Vegetables
- 🎃 1/2 pumpkin
- 🧅 1.5 onions
- 🥕 2/3 carrot
Protein
- 🐖 150g pork for curry
Condiments
- 1 tbsp cooking oil
- 🧄 1 tbsp minced garlic
- 🧂 Pinch of salt
- 100g curry powder
Liquid
- 💧 4 cups water
STEPS
Prepare the pumpkin by cutting it in half, removing the seeds, and washing it. Dice the pumpkin, onion, and carrot into 1x1 cm cubes.
Heat 1 tbsp of cooking oil and 1 tbsp of minced garlic in a pan over medium heat. Add the pork and cook until the surface turns white.
Add the diced pumpkin, onion, and carrot to the pan. Sprinkle a pinch of salt and stir-fry for 1-2 minutes.
Pour 4 cups of water into the pan and bring to a boil over high heat. Once boiling, reduce the heat to medium and cook until the pumpkin is tender.
Add 100g of curry powder to the pan and stir well. Simmer on medium heat for 1 minute until the curry thickens.
