INGREDIENTS
Fish
- 🐟 200g salmon fillets
Vegetables
- 🥔 300g potatoes, diced
- 🥦 80g asparagus, peeled and sliced
Seasoning
- 🧂 Pinch of salt and pepper
- Flour for coating
Cooking Oil
- 1 tbsp salad oil
Sauce
- 1 tbsp sake
- 1.5 tbsp mirin
- 1.5 tbsp soy sauce
- 🧈 10g salted butter
STEPS
Dice the potatoes and soak them in water for 5 minutes. Drain and microwave them in a heatproof container for 4 minutes at 600W. Peel the bottom half of the asparagus and slice diagonally into 4cm pieces.
Cut the salmon into thirds, season with salt and pepper, and coat with flour.
Heat salad oil in a frying pan over medium heat. Add the salmon and cook until both sides are browned. Push the salmon to the side of the pan.
Add the potatoes and asparagus to the pan and stir-fry briefly. Add the sauce ingredients (sake, mirin, soy sauce, butter) and mix until everything is coated.
