    • 🥔 1 potato (150g), peeled and diced
    • 🍄 100g enoki mushrooms, trimmed and halved

    • 1/2 tsp chicken stock powder

    • Pinch of pepper
    • Dash of chili oil

Peel and dice the potato into 2cm cubes. Soak in water briefly, then drain. Microwave the potato with 1 tbsp water in a heatproof container covered with plastic wrap for 4 minutes at 600W. Drain the water. Trim and halve the enoki mushrooms, then separate them by hand.

Heat water in a pot over medium heat until boiling. Add chicken stock powder, potato, and enoki mushrooms. Simmer on low heat for about 3 minutes until the potato is tender. Season with salt and pepper.

Serve the soup in bowls, drizzle with chili oil, and garnish with chopped green onion.
