Heat vegetable oil in a large skillet over medium heat. Brown the pork chops on both sides for 7 to 10 minutes. Drain on a paper towel-lined plate.

In a saucepan over medium-low heat, mix brown sugar, butter, apricot preserves, cinnamon, nutmeg, ginger, vanilla extract, and pecans. Cook until the sugar dissolves and sauce thickens, about 5 minutes. If it becomes too thick, stir in reserved yam liquid.

Stir the drained yams into the sauce until well coated.

Place the pork chops in the prepared baking dish.

Spoon the yam mixture over the pork chops.

Bake in the preheated oven for 30 to 45 minutes or until the chops finish cooking. Rest for 10 minutes before serving.
