Seasoning

- 2 tbsp soy sauce
- 1 tbsp shrimp paste
- 1 chopped chili pepper
- 2 tbsp cooking oil
STEPS
Heat cooking oil in a pot and sauté the onion until softened.
Add chopped green onion and stir to create a fragrant base.
Add pork belly strips and minced garlic, then stir-fry until the pork is browned.
Pour water into the pot and bring to a boil, skimming off any impurities.
Prepare chili oil by mixing chili powder, minced garlic, and chopped chili pepper in a bowl. Microwave for 90 seconds.
Season the soup with soy sauce and shrimp paste, adjusting to taste.
Add bok choy and simmer for 2 minutes until tender.
Serve the stew in a bowl and top with chili oil.
