Pork and Daikon Miso Stew

INGREDIENTS

  • Meat

    • 350g pork belly block
  • Vegetables

    • 300g daikon, 10cm piece
    • 2 pieces ginger, julienned
    • Chopped green onion, to taste
  • Seasoning

    • đź§‚ Pinch of salt and pepper
    • 1 tbsp salad oil
    • 300ml water
  • Combined Seasoning

    • 2 tbsp sake
    • 2 tbsp mirin
    • 🍬 1/2 tbsp sugar
    • 2 tbsp miso

STEPS

Cut daikon into 2cm slices, peel, and quarter each slice. Julienne ginger. Mix the combined seasoning ingredients in a bowl.

Cut pork belly into 2cm slices and season with salt and pepper.

Heat salad oil in a pressure cooker over medium heat. Add pork and sear both sides until browned.

Add daikon and ginger to the pressure cooker, stirring to coat with the pork fat.

Add the combined seasoning and water. Bring to a boil, then cover and cook under pressure on low heat for 15 minutes.

Turn off the heat and let the pressure release naturally. Remove the lid and simmer over medium heat for 10 minutes to reduce the sauce.

Serve the stew in bowls and garnish with chopped green onion.
