STEPS
Trim the young ginger, leaving about 5 cm of the stem. Peel the thin skin off the root and shape it neatly.
In a container tall enough to hold the ginger upright, mix the sugar, salt, and vinegar.
Boil water in a pot, blanch the ginger for 20–30 seconds, then drain. Place the ginger root-down into the prepared vinegar mixture and refrigerate for 1–2 days.
