INGREDIENTS
Protein
- 1 (4 pound) whole duck, dressed
Spices
- ½ teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ÂĽ teaspoon ground nutmeg
- ÂĽ teaspoon ground white pepper
- â…› teaspoon ground cloves
Condiments
- 3 tablespoons soy sauce, divided
- 1 tablespoon honey
- ½ cup plum jam
- ÂĽ cup finely chopped chutney
- 1 ½ teaspoons sugar
- 1 ½ teaspoons distilled white vinegar
Vegetables
- 5 green onions, divided
Fruits
- 1 orange, sliced in rounds

- 1 tablespoon chopped fresh parsley, for garnish
STEPS
Rinse duck inside and out; pat dry. Cut off tail and discard.
Mix spices together in a small bowl. Sprinkle 1 teaspoon of spice mix into duck cavity. Combine 1 tablespoon soy sauce with the remaining spice mix and rub over duck's exterior.
Insert cut green onion in duck cavity. Cover and refrigerate for at least 2 hours or overnight.
Place duck on a rack in a wok or pot. Steam for 1 hour, replenishing water as needed.
Drain juices and remove green onion. Preheat oven to 375°F (190°C). Place duck in a roasting pan and pierce skin with a fork.
Roast duck in the oven for 30 minutes.
Mix 2 tablespoons soy sauce with honey. Brush mixture onto duck.
Increase oven temperature to 500°F (260°C). Roast for 5 minutes until skin is browned, without charring.
Prepare serving sauce by combining plum jam, chutney, sugar, and vinegar. Chop the remaining green onions.
Garnish duck with orange slices and parsley. Serve with plum sauce and chopped green onions.
