  • Vegetables

    • 🥒 1 zucchini, sliced into 1cm rounds
    • 🍅 4 cherry tomatoes, halved
    • 🧄 1 clove garlic, minced
  • Seasonings

    • 2 tsp soy sauce
    • 🍋 2 tsp lemon juice

Cut the Spanish mackerel into bite-sized pieces and lightly coat with flour, shaking off excess.

Slice zucchini into 1cm rounds, halve cherry tomatoes, and mince garlic.

Heat 1 tbsp olive oil in a pan, add minced garlic, and cook until fragrant. Add mackerel and pan-fry until golden brown on both sides. Remove and set aside.

Wipe excess oil from the pan, add remaining olive oil, and sauté zucchini until tender. Add cherry tomatoes and stir briefly. Season with soy sauce and lemon juice, then pour over the mackerel.
