INGREDIENTS
Rice
- 🍚 2 bowls cooked rice (300g)
Meat
- 🍗 100g chicken thigh
Seafood
- 🦐 80g frozen seafood mix
Vegetables
- 1 green pepper
- 75g red paprika
- 🧅 100g onion
Condiments
- 1 tbsp olive oil
- 🍋 Lemon wedges, as needed
- 🧂 1/2 tsp salt
- Pepper, as needed
- 1 tsp curry powder
- 1 tbsp ketchup
STEPS
Cut the chicken into bite-sized pieces.
Dice the green pepper, red paprika, and onion into 1cm cubes.
Heat olive oil in a frying pan and cook the chicken over medium heat until the color changes.
Add the green pepper, red paprika, and onion, and stir-fry until softened.
Add the seafood mix and stir-fry until heated through.
Add the rice and stir-fry to combine, then add the seasonings (salt, pepper, curry powder, ketchup) and mix until well incorporated.
Serve on a plate and garnish with lemon wedges.
