INGREDIENTS
Main
- 🍜 2 servings fresh soba noodles
- 🦪 8 shucked oysters (120g)
- 1/2 bunch mitsuba
Broth
- đź’§ 600 ml water
- 1 dashi pack
Preparation
- đź§‚ 1 tsp salt
- 1 tsp potato starch
Seasoning
- 1.5 tbsp mirin
- đź§‚ 1/3 tsp salt
- 🍶 1 tbsp soy sauce
STEPS
Cut the mitsuba into 2 cm pieces.
In a bowl, combine oysters with salt and potato starch. Gently rub and rinse with water. Repeat twice, then pat dry.
In a pot, bring water to a boil. Add the dashi pack and simmer on low heat for 3 minutes. Remove the dashi pack.
Add the oysters and seasonings (mirin, salt, soy sauce) to the broth. Simmer on medium heat for 3 minutes until the oysters are cooked.
Cook the soba noodles in boiling water according to package instructions. Drain well.
Place the soba noodles in serving bowls. Pour the broth over the noodles and top with oysters and mitsuba.
