Cut the corn into thirds lengthwise, then quarter each piece vertically. Slice the garlic in half, remove the core, and crush with the flat side of a knife.

Place oysters in a bowl with potato starch and gently mix. Add enough water to cover and wash the oysters gently, changing the water until clear. Drain and pat dry with paper towels.

Heat olive oil, garlic, salt, and chili in a pot over low heat until fragrant. Add oysters and corn, then simmer over medium heat for about 5 minutes.
