    • 🥬 1 (5 ounce) bag baby spinach

    • 🍋 1 teaspoon lemon juice

Heat the olive oil in a large skillet over medium-high heat. Add onion and mushrooms and cook for 7 minutes, stirring occasionally.

Add garlic and crushed red chile flakes to the skillet. Cook for 1 more minute, stirring frequently.

Stir in kosher salt, chicken broth, and rotini pasta. Bring everything to a boil. Reduce the heat to low, cover, and let it simmer for 10 minutes. Stir halfway through cooking time to prevent sticking.

Turn off the heat and add the baby spinach on top. Cover again and let it sit for 2 minutes so the spinach wilts.

Stir in the grated Parmesan cheese and lemon juice. Mix well and serve immediately while it's warm.
