Pasta
- 🍝 160g spaghetti
Canned Goods
- 🐟 1 can (190g) canned mackerel in water
- 🍅 300g canned diced tomatoes
Vegetables
- 🧅 1/4 onion (50g), chopped
- 🍄 100g shimeji mushrooms
- 🥦 80g broccoli florets
- 🧄 2 cloves garlic, minced
Seasonings
- 1 tbsp olive oil
- 💧 400cc water
- 1/2 tsp consomme powder
- 🧂 2/3 tsp salt
- A pinch of black pepper
Finishing Touches
- 1/2 tsp olive oil
- 🧀 1 tbsp grated Parmesan cheese
STEPS
Heat 1 tbsp olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant.
Add chopped onion, shimeji mushrooms, and broccoli florets. Stir-fry until slightly softened.
Add the canned mackerel (including the liquid), canned diced tomatoes, water, consomme powder, salt, and pepper. Stir to combine.
Add the spaghetti directly into the skillet. Ensure the pasta is submerged in the liquid. Cover and cook over medium heat for about 10 minutes, stirring occasionally.
Once the pasta is cooked and the sauce has thickened, drizzle 1/2 tsp olive oil and sprinkle grated Parmesan cheese on top. Serve immediately.
