INGREDIENTS
Dry Ingredients
- 90g all-purpose flour
- 50g grated Parmesan cheese
- 50g chopped black olives
- A pinch of black pepper
- A pinch of rosemary
Wet Ingredients
- 60g softened butter
- 1-2 tbsp milk
STEPS
Rinse canned black olives, pat dry with a kitchen towel, and chop finely.
Cream softened butter in a bowl, then add sifted flour, Parmesan cheese, black pepper, and rosemary. Mix until partially combined.
Add chopped black olives and mix lightly. Gradually add milk until the dough comes together into a single lump.
Shape the dough into a cylindrical log, wrap in parchment paper, and freeze for 1-2 hours.
Slice the dough into 0.5-0.8 cm thick rounds, place on a baking tray, and bake at 160-170°C for 12-15 minutes until golden brown.
