Okra and Shirasu Japanese-style Pasta

INGREDIENTS

  • Pasta

    • 🍝 200g spaghetti
    • 30g shirasu
    • 🌱 6 okra pods
    • 🍄 1/2 pack shimeji mushrooms
    • đź§„ 1 clove garlic, minced
    • 1 tbsp olive oil
    • 2 tbsp concentrated soy sauce
    • Chopped nori, as needed

Rub salt onto okra, rinse with water, and remove the stem. Cut shimeji mushrooms into smaller pieces and mince the garlic.

Boil spaghetti in salted water according to package instructions. Reserve 50ml of pasta water. Add okra to the boiling pasta one minute before it's done. Drain and slice okra diagonally into thirds.

Heat olive oil and garlic in a frying pan until fragrant. Add shimeji mushrooms and sauté until softened.

Add shirasu, cooked spaghetti, okra, soy sauce, and reserved pasta water to the pan. Toss everything together until well combined.
