Okra and Nameko Miso Soup

    • 4 okra pods
    • 100g nameko mushrooms
  • Liquid

    • 400ml water
  • Seasoning

    • 1/2 tsp Japanese dashi powder
    • 2 tbsp miso paste

Trim the okra ends, rub with a pinch of salt, rinse under water, pat dry, and slice into 1cm pieces.

Wash the nameko mushrooms and drain well.

In a pot, bring water and dashi powder to a boil over medium heat. Add nameko mushrooms and simmer for 2 minutes.

Lower the heat, dissolve miso paste into the soup, and stir well. Add sliced okra and simmer for 1 minute.
