Okara Simmered Yellowtail and Daikon

    • 80g fresh okara
    • 🐟 2 fillets (250g) yellowtail
    • 🥗 350g daikon radish
  • Broth

    • 1/3 tsp Japanese dashi powder
    • 💧 200cc water
  • Seasonings

    • 1 tbsp sake
    • 2 tbsp mirin
    • 🍬 1/2 tbsp sugar
    • 🧂 2 tbsp soy sauce
    • 1/2 tsp grated ginger
    • Sliced chili to taste

STEPS

Peel the daikon radish thickly, cut it in half lengthwise, and slice into 1.5cm thick pieces. Boil water in a pot, add the daikon, bring to a boil, cover, and cook for 5–6 minutes. Drain the water.

Cut the yellowtail fillets into 2–3 pieces each.

In a frying pan, add dashi powder and water, bring to a boil, then add the seasonings (☆). Once boiling again, add the yellowtail, cover, and simmer for 4–5 minutes. Remove the yellowtail.

Add the daikon to the pan, cover, and simmer on low heat for 10 minutes.

Return the yellowtail to the pan, cover, and simmer for 2–3 minutes. Add the okara, breaking it apart and mixing gently.
