INGREDIENTS
Seafood
- 🐙 100g octopus
- 50g fresh wakame
Vegetables
- 1/2 bitter melon
Seasoning
- 🧂 1/3 tsp salt
- 3 tbsp vinegar
- 3 tbsp mirin
- 1 tbsp soy sauce
- 1/2 tsp Japanese dashi powder
- 💧 100ml water
STEPS
Cut the octopus and wakame into bite-sized pieces.
Remove seeds and pith from the bitter melon, then slice thinly.
Place the bitter melon in a bowl, sprinkle with salt, massage, and squeeze out excess water.
Combine all ☆ ingredients in a pot, bring to a boil, and let cool.
Mix the octopus, bitter melon, wakame, and sanbaizu sauce together. Chill in the refrigerator for 30 minutes before serving.
