    • 1 teaspoon vanilla extract
    • ¼ cup brandy
    • 🍫 8 ounces white chocolate, chopped
    • 🍚 ⅓ cup confectioners' sugar
    • 🥛 2 teaspoons milk, or as needed
    • Paper candy cups
    • 1 drop red food coloring, or more as needed

Cream sugar and butter together with a spatula until light and creamy. Set aside.

Heat an inch of water in a pot over low heat. Melt dark chocolate in a heat-proof bowl placed over the pot. Stir with a spatula.

Place chestnuts in a food processor; pulse until very finely ground. Add to the sugar-butter mixture and stir until combined. Mix in salt, cayenne pepper, vanilla extract, brandy, and melted chocolate until well blended.

Scoop filling onto a silicone-lined baking sheet and smooth out. Cover balls with plastic wrap and refrigerate.

Reserve 20% of white chocolate. Melt the rest in a heat-proof bowl over simmering water until the temperature reaches 105°F (41°C). Stir in the reserved chocolate until melted.

Coat each chocolate truffle with white chocolate using a fork, then place onto a lined baking sheet. Re-melt white chocolate over hot water if it starts to harden.

Mix confectioners' sugar with milk to create a thick paste. Dye with red food coloring and pipe a small dot on each truffle. Serve in candy cups.
