    • 2 servings fresh soba noodles
    • 100g nameko mushrooms
    • 150g grated daikon radish
    • đź§… 3 stalks green onions
  • Sauce

    • 3 tbsp concentrated noodle sauce
    • 200ml water

STEPS

Wash nameko mushrooms lightly and drain. Grate the daikon radish and lightly squeeze out excess water. Cut green onions into 2cm diagonal slices.

Place nameko mushrooms in a microwave-safe container with 3 tbsp of water. Cover loosely with plastic wrap and microwave at 600W for 1.5 minutes. Rinse under cold water and drain.

Boil water in a pot and cook soba noodles according to package instructions. Rinse under cold water and drain well.

Mix noodle sauce and water in a bowl to prepare the dipping sauce.

Serve half the soba noodles in a bowl, topped with half the grated daikon, nameko mushrooms, and green onions. Pour half the dipping sauce over the toppings.
