- 🧈 150g butter
- 🧂 120g sugar
- ☕ 1-2 tsp coffee extract

STEPS
In a bowl, soften room-temperature butter using a whisk. Gradually add sugar in three portions, whisking until creamy.
Add egg yolks one at a time, mixing well. Then, add egg whites in three portions, mixing thoroughly each time.
Mix in coffee extract until well incorporated. If unavailable, dissolve 1 tbsp of instant coffee in a small amount of hot water as a substitute.
Sift cake flour and baking powder into the mixture. Fold gently using a spatula in a cutting motion, creating a # shape.
Line a muffin tin with parchment paper. Fill each cup 70-80% full with batter. Sprinkle sliced almonds on top.
Bake in a preheated oven at 170°C (338°F) for 20-25 minutes. Test with a toothpick; if it comes out clean, the muffins are done.
