- 🐚 200g clams (purged)
Broth
- 5g dried kombu
- 💧 400ml water
Seasoning
- 1 tbsp miso
STEPS
Scrub the clam shells together under running water to clean them.
Place kombu and water in a pot and let it sit for 30 minutes. Heat over medium heat and remove the kombu just before boiling.
Add clams to the pot, reduce to low heat, cover, and simmer for about 5 minutes until the clams open.
Turn off the heat, dissolve miso into the soup, and heat again over medium heat until it comes to a gentle boil.
