Miso Soup with Bamboo Shoots and Wakame

INGREDIENTS

  • Vegetables

    • 120g canned bamboo shoots
    • 1 tsp dried wakame
    • 2 stalks green onion
  • Seasoning

    • 1/2 tsp dashi powder
    • 2 tbsp miso
  • Liquid

    • đź’§ 400ml water

Cut the bamboo shoots in half lengthwise, then slice into 7mm pieces. Chop the green onions finely.

Soak the dried wakame in water to rehydrate, then drain the excess water.

In a pot, bring water and dashi powder to a boil. Add bamboo shoots and wakame, then simmer on low heat for about 3 minutes.

Turn off the heat and mix in the miso. Warm the soup gently until just before boiling. Serve in bowls and garnish with chopped green onions.
