INGREDIENTS

  • Miso Simmered Mackerel

    • 🐟 2 fillets of mackerel (160g)
    • 1/2 piece of atsuage (100g)
    • 🍄 1/2 pack of shimeji mushrooms (50g)
    • 1 tsp grated ginger
    • 1 tbsp sake
    • 1 tbsp mirin
    • 🍬 1/2 tbsp sugar
    • 1 tbsp miso
    • 💧 1 tbsp water
  • Sesame Ponzu Salad

    • 1/2 bunch of komatsuna (100g)
    • 1/2 bag of bean sprouts (100g)
    • 1 1/2 tbsp ponzu sauce
    • 🌰 1 tbsp toasted sesame seeds

STEPS

Prepare the mackerel fillets by rinsing them and patting them dry.

In a frying pan, combine sake, mirin, sugar, miso, and water. Heat gently until the miso dissolves.

Add the mackerel fillets, atsuage, shimeji mushrooms, and grated ginger to the pan. Cover and simmer for 10 minutes.

While the mackerel simmers, blanch the komatsuna and bean sprouts in boiling water for 1-2 minutes. Drain and cool.

Mix the blanched vegetables with ponzu sauce and toasted sesame seeds in a bowl.

Serve the miso simmered mackerel alongside the sesame ponzu salad.
