Mirin-marinated Grilled Horse Mackerel

INGREDIENTS

  • Fish

    • 🐟 2 cleaned horse mackerels
  • Seasoning

    • 5 tbsp mirin
    • 🧂 1 tbsp soy sauce
    • 🌰 1 tbsp white sesame seeds
  • Oil

    • 1/2 tbsp salad oil

Remove the scales from the horse mackerels.

Make a cut along the belly side, guiding the knife along the backbone to open the fish flat. Repeat on the other side.

Cut the backbone near the tail and trim off the belly bones thinly.

Place the fish in a resealable bag with mirin and soy sauce. Remove air, seal the bag, and marinate in the refrigerator for 2 hours.

Remove the fish from the marinade and pat dry with a paper towel. Heat salad oil in a pan over low heat and cook the fish skin-side down until fully cooked. Add remaining marinade (2 tbsp) and sesame seeds to coat.
