INGREDIENTS
Fish
- 🐟 1 mackerel fillet (280g)
Seasoning
- 🧂 A pinch of salt
- 🌾 White sesame seeds as needed
Marinade
- 🍶 1 tbsp sake
- 🍶 50cc mirin
- 🧂 50cc soy sauce
STEPS
Sprinkle salt over the mackerel and let it sit for 10 minutes. Rinse with water and pat dry with a paper towel.
Place the mackerel in a tray, add the marinade ingredients (sake, mirin, soy sauce), and lightly mix. Cover with cling wrap and refrigerate for about 3 hours to let the flavors infuse.
Remove the mackerel from the marinade, pat dry with a paper towel, and place skin-side down on a rack. Sprinkle white sesame seeds evenly over the surface. Sun-dry until the surface is no longer sticky to the touch.
