Maitake and Tofu Miso Soup

    • 🧈 100g firm tofu
    • 🍄 50g maitake mushrooms
    • 1 tsp dried wakame
  • Seasonings

    • 1/4 tsp Japanese granulated dashi
    • 2 tbsp miso paste
  • Liquid

    • 💧 400ml water

Tear the maitake mushrooms into bite-sized pieces.

Cut the tofu into 1.5cm cubes.

Heat water and granulated dashi in a pot over medium heat until boiling. Add maitake and tofu, then simmer on low heat for about 2 minutes until maitake is cooked. Stir in wakame.

Turn off the heat and dissolve miso paste into the soup. Heat gently over medium heat until just before boiling, then remove from heat.
