Maitake and Fried Tofu Miso Soup

    • 50g maitake mushrooms
    • đź§… 50g thinly sliced onion
  • Protein

    • 20g fried tofu
  • Seasoning

    • 1/3 tsp Japanese dashi powder
    • 2 tbsp miso paste
  • Liquid

    • đź’§ 400ml water

Tear maitake mushrooms into bite-sized pieces and thinly slice the onion.

Pat the fried tofu with a paper towel to remove excess oil, then cut it into 1cm wide strips.

In a pot, heat water and dashi powder over medium heat until boiling. Add maitake mushrooms, onion, and fried tofu. Cook for 2 minutes until the onion softens.

Turn off the heat and dissolve miso paste into the soup. Heat gently over medium heat until just before boiling, then remove from heat.
