- 1/2 lotus root
- 1 small pollack roe
- Cooking oil as needed
Boiling Water for Lotus Root
- Water as needed
- 2 tbsp vinegar
Batter
- 1/2 cup flour

STEPS
Peel the lotus root and slice it evenly. Remove the membrane from the pollack roe and scrape out the insides.
Boil water in a pot, add 2 tbsp vinegar, and blanch the lotus root slices for about 3 minutes.
Drain the blanched lotus root slices and remove excess water.
Fill the holes of the lotus root slices with the pollack roe.
Mix 1/2 cup flour and 1 egg in a bowl to create the batter.
Coat the lotus root slices filled with pollack roe in flour, then dip them into the egg batter.
Heat a pan with cooking oil and fry the lotus root pancakes until golden brown on both sides.
