    • 100g lotus root, thinly sliced
    • 100g mizuna, cut into 3cm pieces
    • 🌽 30g canned corn
  • Dressing

    • 50g mentaiko, scooped out
    • 4 tbsp mayonnaise
    • 🥛 1 tbsp milk

Cut the lotus root in half lengthwise and slice thinly. Soak in water to remove excess starch and drain. Place in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 2 minutes.

Trim the roots of the mizuna and cut into 3cm pieces.

Make a cut in the mentaiko and scoop out the contents with a spoon.

In a bowl, mix the mentaiko, mayonnaise, and milk to create the dressing. Add the lotus root, mizuna, and corn, and toss to combine.
