STEPS
Preheat the oven to 350°F (175°C). Spray two 9x5-inch loaf pans with cooking spray.
Mix the dry ingredients (flour, baking soda, and salt) in a bowl.

Gradually stir the dry mixture into the wet ingredients until just moistened. Fold in the grated zucchini and chopped pistachios.
Pour the batter evenly into the loaf pans. Bake in the preheated oven for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.
Cool the loaves in the pans for 10 minutes before carefully removing them to cool completely on a wire rack.
