    • 15g dried shredded kombu
    • 🥒 2 cucumbers (200g)
    • 6 shiso leaves
    • 2 myoga (optional)
    • 2 minced ginger pieces
  • Soy Sauce Dressing

    • 1 cup kombu soaking liquid
    • 3 tbsp soy sauce
    • 🍬 1 tbsp sugar
    • đź§‚ 1/2 tbsp salt
    • 2 tsp vinegar

STEPS

Rehydrate the dried shredded kombu in water for about 30 minutes. Reserve the soaking liquid.

Slice the cucumbers thinly and sprinkle with a pinch of salt. Let sit for 10 minutes, then squeeze out excess water.

Chop the shiso leaves and myoga (if using) into thin slices.

Mix the kombu soaking liquid, soy sauce, sugar, salt, and vinegar in a bowl to create the soy sauce dressing.

Combine the rehydrated kombu, cucumbers, shiso leaves, myoga, and minced ginger in a large bowl. Pour the soy sauce dressing over and mix well.
