Wash the komatsuna thoroughly, trim the roots, and chop into 4cm pieces.

Heat salad oil in a frying pan, add the canned mackerel, and stir-fry gently to break it apart.

Spread the chopped komatsuna over the mackerel, cover the pan, and steam for 30 seconds over medium heat.

Uncover the pan, stir-fry for 1–2 minutes until the komatsuna softens, then add curry powder, salt, and pepper. Mix well.
