INGREDIENTS
Sauce
- đź§‚ 3 tablespoons soy sauce
- 🍚 2 ½ tablespoons white sugar
- 2 tablespoons sesame oil
- đź§„ 2 teaspoons minced garlic
Noodles
- 8 ounces sweet potato noodles
Meat
- 4 ounces lean beef, cut into 2-inch long strips
Vegetables
- 6 ounces fresh spinach
- đź§… 1 small sweet onion, thinly sliced
- 🍄 4 mushrooms, stemmed and sliced
- 🥕 1 small carrot, cut into matchsticks
Cooking Oil
- 1 tablespoon vegetable oil, divided
STEPS
Whisk soy sauce, sugar, sesame oil, and garlic in a bowl to make the sauce.
Cook sweet potato noodles in lightly salted boiling water for 6 to 7 minutes. Rinse under cold water and drain.
Marinate beef with 1 tablespoon of prepared sauce.
Blanch spinach in boiling water for 1 minute, transfer to cold water, drain, and season with salt and pepper.
Sauté onion, mushrooms, and carrot separately in oil for 1 to 2 minutes each.
Cook marinated beef until browned, 1 to 2 minutes.
Combine cooked beef, vegetables, and noodles in skillet, then add remaining sauce and toss to coat.
