STEPS
Slice the scallops horizontally to reduce thickness.
Bring water to a boil in a pot, then reduce to low heat. Add scallops and blanch for 5–10 seconds. Remove and cool in ice water.
Mix olive oil, vinegar, soy sauce, wasabi, and salt and pepper in a bowl to prepare the Japanese-style dressing.
Arrange baby leaf greens on a plate, place scallops on top, and drizzle with the dressing.
